A vinegar-based American-Sichuan hot sauce built around mala - 麻辣 - the flavor of Chongqing cuisine. Là is heat. Má is the electric tingling numbing of Sichuan peppercorn - huājiāo 花椒. Named for Pó Po - 婆婆 - grandmother, and the juāncūn military village kitchens of Taiwan where Chongqing cuisine survived.

Made from organic Er Jing Tiao, Sichuan Cross, Xiao Mi La and Korean chili peppers grown at Radical Family Farms in Sebastopol. 50 Hertz Sichuan peppercorns. Apple cider vinegar, garlic, sea salt. Five ingredients. Three heat levels.
